Job Overview
Nén Lab is the research and development hub for the Nén brand, responsible for driving innovation in our fine dining experiences, non-alcoholic pairings, and other F&B products. We are seeking a passionate and skilled R&D Chef to join our dynamic team. This unique role combines the expertise of both a researcher and a chef, focusing on exploring and utilizing Vietnamese local ingredients to craft exceptional culinary experiences.
Key Responsibilities
- Culinary Innovation: Develop and refine new dishes for the Nén tasting menus, using a deep understanding of Vietnamese cuisine and local ingredients. Ensure that every creation aligns with Nén’s standards of excellence and creativity.
- Research & Development: Conduct thorough research on Vietnamese ingredients, both traditional and underutilized, to innovate and create unique culinary offerings. This includes sourcing, testing, and evaluating ingredients to ensure quality and sustainability.
- Menu Development: Collaborate closely with the Executive Chef and the culinary team to design and implement new tasting menus, focusing on seasonal ingredients and sustainability.
- Product Design: Contribute to the development of non-alcoholic pairings and other fine F&B products for the Nén brand, ensuring that they complement the dining experience and reflect the brand’s identity.
- Local Supply Chain Management: Engage with local suppliers to source high-quality ingredients, fostering relationships that support sustainability and reduce reliance on imported products.
- Culinary Education: Stay informed about global culinary trends and innovations, especially those relevant to Vietnamese cuisine. Share knowledge and techniques with the culinary team to enhance overall skills and creativity.
- Quality Control: Oversee the testing of all new dishes and products to ensure they meet the highest standards of quality, taste, and presentation before they are introduced to the menu or product line.
Qualifications
- Experience:
- Proven experience as a chef, with a strong background in recipe development and culinary innovation.
- Passion for Vietnamese cuisine and its ingredients, flavors, and techniques.
- Experience in fine dining or high-end culinary environments is highly preferred.
- Skills:
- Strong research skills in both English and Vietnamese.
- Expertise in ingredient sourcing, culinary techniques, and product development.
- Excellent organizational and project management skills.
- Ability to work independently and as part of a team in a fast-paced environment.
