We love the word “Light”. So familiar yet mysterious. Deep but also weightless. It is the namesake of our restaurant and represents our quest: to shed a new light on Vietnamese cuisine.

Introducing Sto:ry Menu#3: Light, a collection of ideas and stories on Vietnamese cuisine and ingredients by Executive Chef Summer Le, with “Light” as the central inspiration.

This menu is a balance between exploration and comfort. It comes packing with chef Summer’s ideas, revelations, and feelings for the past two years. Just as its two predecessors in our flagship Sto:ry Menu, “Light” also carries the unmistakable Vietnamese core within.

CONCEPTUALIZATION

“Light” is the first abstract theme that we managed to conceptualize as a culinary experience.

CHEF'S NOTES

Chef’s Note is one of the main tools we use to tell stories and to connect with our patrons. The little sketches (with colors this time!) were drawn by none other than Chef Summer herself.

Initially, we only had 8 chef’s notes for this 9-course menu. That is because the final course “Reflection” (artisanal Lotus Tea brewed with Koridashi method served with toasted coconut “planets”) didn’t come with a story. Unlike the previous 8 courses, we intended for the 9th course to be a period of stillness at the end of the “Light” experience, so the guest can take in and savor all the food and ideas we presented. Although many guests have requested us to write a story for this one, none was written. Until we had the idea of bringing the guests a blank Chef’s Note and asked them to write the story themselves, after the emotions and flavors that “Light” delivered.

Reflection is in a way an ever-changing story that the guests and Nén Light compose together, a retaining emotion, a link.
